Cover and refrigerate for 3 hours or overnight, turning occasionally. Refrigerate remaining mint sauce separately.Drain Lamb, and place, fat side down on heated oiled grill plate (or grill or barbeque). Cover lamb loosely with foil and cook about 10 minutes or until browned underneath. Uncover; turn lamb, sprinkle with rosemary. Cook, covered, about 10 minutes or until cooked as desired (or cook by indirect heat in covered barbecue following manufacturer's instructions. ). Remove from heat; stand covered, 15 minutes.Slice lamb thinly. Serve with remaining mint sauce.

Serving suggestion - Serve with baby potatoes and a tomato and radish salad. The mint sauce can me made several days ahead. Ask the butcher to butterfly a leg of lamb for you.

Ingredients

2 cups (400g) ricotta Cheese

150g (4 1/2 ounces) nougat, chopped coarsely

1 ¼ cup (310ml) thickened (heavy cream)

1 cup (135g) Frozen raspberries

Line base and sides of 14cm x 21 cm (5 ½ inch x 8 ½ inch) loaf pan with foil or baking paper, extending foil 5 cm (2 inches) over two long sides.Blend or process cheese and sugar until smooth, then transfer to a large bowl. Stir in nuts and nougat.Beat cream in a small bowl with electric mixer until soft peaks form. Fold cream into the cheese mixture, then fold in raspberries.Spoon mixture into pan, cover with foil and freeze until firm. Slice parfait, then refrigerate about 30 minutes before serving to soften slightly.

Tip - it is fine to use just one 300ml carton of cream for this recipe. The parfait can me made a week ahead up to step 3.

Butterflied Lamb With Fresh Mint Sauce

Preparation + Cook time 40 minutes (+refrigeration and standing) Serves (10)

Ingredients

½ cup (90g) honey

1 tablespoon wholegrain mustard

2 kgs butterflied leg of lamb

¼ cup loosely packaged rosemary sprigs

For Mint Sauce

½ cup (110g) firmly packed light brown sugar

½ cup(125 ml) water

1 1/2 cups (375ml) cider vinegar

½ cup finely chopped fresh mint

Method.

Make mint sauce. Stir sugar and the water in a small saucepan over heat, with out boiling , until sugar dissolves. Bring to the boil. Reduce heat and simmer, uncovered, with out stirring, 5 minutes or until the syrup thickens slightly. Combine syrup, vinegar and mint in a small bowl.Combine a quarter of the mint sauce, honey and mustard in a large shallow dish. Add lamb turn to coat in marinade. Cover and refrigerate for 3 hours or overnight, turning occasionally. Refrigerate remaining mint sauce separately.Drain Lamb, and place, fat side down on heated oiled grill plate (or grill or barbeque). Cover lamb loosely with foil and cook about 10 minutes or until browned underneath. Uncover; turn lamb, sprinkle with rosemary. Cook, covered, about 10 minutes or until cooked as desired (or cook by indirect heat in covered barbecue following manufacturer's instructions. ). Remove from heat; stand covered, 15 minutes.Slice lamb thinly. Serve with remaining mint sauce.

Serving suggestion - Serve with baby potatoes and a tomato and radish salad. The mint sauce can me made several days ahead. Ask the butcher to butterfly a leg of lamb for you.

DESSERT

Raspberry nougat frozen parfait.

Preparation + Cook time - 25 minutes (+freezing and refrigeration) Serves 8

Ingredients

2 cups (400g) ricotta Cheese

¾ cup (165g) caster (superfine) sugar

¼ cup (40g whole almonds, roasted, chopped coarsely

150g (4 1/2 ounces) nougat, chopped coarsely

1 ¼ cup (310ml) thickened (heavy cream)

1 cup (135g) Frozen raspberries

Method

Line base and sides of 14cm x 21 cm (5 ½ inch x 8 ½ inch) loaf pan with foil or baking paper, extending foil 5 cm (2 inches) over two long sides.Blend or process cheese and sugar until smooth, then transfer to a large bowl. Stir in nuts and nougat.Beat cream in a small bowl with electric mixer until soft peaks form. Fold cream into the cheese mixture, then fold in raspberries.Spoon mixture into pan, cover with foil and freeze until firm. Slice parfait, then refrigerate about 30 minutes before serving to soften slightly.

Tip - it is fine to use just one 300ml carton of cream for this recipe. The parfait can me made a week ahead up to step 3.

Slice with a knife that has been dipped in hot water, before allowing to soften in the refrigerator (step 5)

Serving suggestions - You can serve this with fresh raspberries or with a raspberry compote. For a compote, cook 2 ½ cups (330g) Frozen raspberries, and ½ cup (55g) caster) superfine) sugar in medium saucepan, stirring, over a low heat, until berries are very soft/ Push mixture through coarse sieve into medium bowl, discard seeds. Just before serving, stir 500 g fresh raspberries into berry sauce.

You've heard people rave about truffles, how oh-so indescribably delicious they are, how luxurious, how it reminds them of that fabulous little restaurant in the French countryside. They've piqued your curiosity and now YOU are finally ready to try the elusive delicacy, only, it seems like they're nowhere to be found.

You can easily find truffles preserved, but there's nothing like the flavor and aroma of a fresh truffle, which is what gourmands are enamored with. Find a chef, and ask him or her about truffles. They'll instantly go into ecstasy, trying to describe that pungent aroma, that earthy flavor. Truffles are so incredibly sought after, yet so rare, that they're the definition of a luxury item.

Like any produce or vegetable, there are times when truffles are in season and times when they're not. There are two major types of truffles, black and white, and they're harvested during the winter. Black ones are found primarily in France and Italy, but the white truffle is only found in Italy. Italian truffles, white Italian truffles most specifically, are so very rare and so very hard to find, and the season is so short, that overall they're worth almost any price. Summer truffles do exists, and nice enough, but they're nowhere near as intense as the winter varieties.

The most incredible thing about truffles is that they're not "grown". Meaning, there are no fields with neatly planted rows of truffles waiting for the harvest period, like one would imagine. They grow wild, with no intervention, wherever the mushroom feels like. To make things even more complicated, truffles grow underground, so you cant see them at all! Only the special, super-sensitive noses of "truffle-sniffing" dogs and pigs seem to be able to spot where the elusive mushrooms are buried

Add to this the short time span of the truffle season of, and it should give you an idea of why they're so expensive and sell so quickly when they're available.When planning fresh truffle menus, you must plan around the season. Its not hard to do, since depending on weather they'll be available at the same time each year.

Availability:

White truffles are in season starting in October, and the season lasts a few short months. Italian truffles when in season are overnight from Italy every few days.

Black Truffles, both in France and Italy, are available starting in December through February. They're also flown overnight every few days, but they're more readily available than Italian truffles.

Sometimes the season will start earlier or later, and last a couple of months or more. This depends entirely on weather patterns; so once you hear they're available, make your move!

But, it also possesses a deep bodied texture and unique crystalline structure which allows the honey to granulate within one year and as any honey lover knows granulated honey is the sure sign of pure honey. By the way, this honey has a moisture content of around 18%. It is easily spread on crumpets, English muffins, and cornbread and spooned into a hot cup of tea. It is also great on cereals, in homemade granola and as an addition to fish and meat barbeques.

Start Of A Gluten Free Healthy Diet

When we had to go wheat free and gluten free with our diet, we found it to be quite a journey. It takes time to learn how-to go gluten free, as well as how to shop, how to prepare food, and what you can and can't eat.

Recently, we were finally able to determine one of the things that has been triggering Denis' stomach issues, allergy symptoms, and other health concerns. The food which he can eat is a lot less than the food that he can't.

All of these challenges started around 20 years ago. Shortly after we came back from living in Germany for several years, he started having a nominal amount of hypersensitivity to some food and alcohol. As the years moved on, he accumulated more and more allergies.

Every three years or so, he would have an allergy examination done, and each time the list was a bit longer. His allergies consist of both foodstuff and environmental.

There was no help, no one had any real adice. He couldn't go on avoiding more and more of life, along with life's joys. It came time that we did something, so we began to research potential reasons, and exactly how we might put a stop to the expanding list of allergies.The things we found out with our groundwork was quite insightful.

We came across a book named Wheat Belly. The deeper we got into that book, the more we realized why and how he had been experiencing all these troubles.

What we found out is: * wheat is in just about everything that we ingest. * our present-day, genetically modified wheat is just not healthy for us. * how wheat is a concern for our system. * eating as much wheat as we do has long-lasting undesirable effects. * why, and the way we should be eating wheat free.

Approximately five months from the time we started on our journey to healthy eating, Denis started truly recognizing that he was beginning to feel much better than he had in years. In addition we both observed that we were losing inches around our middle - our stomach fat was diminishing.

Even though I don't have many stomach problems, I made a decision to back up Denis' decisions by reducing wheat too. Even though I am making the adjustments more slowly than he is, I have observed several changes in myself also. This has made me much more motivated to become more focused on getting wheat free.

Months later, plus a cross-Canada trip.

Throughout our trip, we got a little lazy with keeping up with our eating plan, and it showed in how we felt by the time we got to our destination. When we got here, we believed it was the perfect time to get back to our normal eating plan.

We have got back to the basics - removing wheat from the diet once again.

At this stage in our learning, we discovered another potential problem and answer for Denis. We learned that he's got all the symptoms of being gluten intolerant. So we began an additional journey - eliminating gluten from our diet

Since we've gone totally wheat free and gluten-free, the visible difference in how he looks and feels is just incredible.The best news is the fact that he is feeling fantastic. His system is winning the battle, and he is healing.

I see a change with me as well now. I never imagined that I had any difficulty with wheat or grains, yet now that I am mindful of exactly what I consume too, I really ntoice a heaviness and sometimes get indigestion after I have something that contains wheat.

Our bodies are slowly adjustingto a much better method of eating.

Gluten-Free Eating

There is no way for any individual to find out if they may be truly gluten intolerant other than to remove gluten from their diet, and then determining whether or not it makes them feel better. Once Denis did exactly that, and began feeling fantastic, that was more than enough to totally validate our diagnosis.

We're still learning. The approach to being fully and absolutely wheat and gluten free is gradual. We have had to adapt our shopping, our food preparation, and our eating routine.

The good news is, there are lots of excellent gluten free recipes and suggestions to be found.

For the moment, we are concentrating breakfast, lunch, and dinner dishes. Luckily for us neither of us really cares for baking, so that can easily hold off until we are much more settled in our new meal regimen.

There is no need for you to suffer with indigestion or a stomach upset. The problem is often due to intolerance to some food. It is a common problem, and it is happening to more and more people every day.

The Buttery World of Double and Triple Cream Cheeses

There are so many different kinds of cheeses; it's an almost impossible task to properly categorize them all. Hard, semi-hard, soft, semi-soft, double cream, triple cream, the categories seem endless! But one thing everyone can agree with is that a creamy cheese is always one of the most popular options on the cheese board. So what makes certain cheeses so deliciously unctuous and creamy? The answer is butterfat. What is it, and what role does it play with creamy cheese? Read on and find out!

Butterfat, also known as milk fat, is the fatty part of the milk. All cheeses contain some butterfat (unless you're eating a fat free cheese, which is a very processed product). The creamiest cheese contains the highest amount of butterfat. In order to legally call a cheese Double Cream or Triple Cream, they have to have a minimum amount of butterfat content.

Double Cream Cheese: a double cream has to have at least 60% butterfat content. Fromage D' Affinois, and the ever-popular Boursin are examples of double creams. Petit Suisse was the first double cream cheese, created in about 1850.

Triple Cream Cheese: In order to be called triple cream, a cheese must have at least 75% or more butterfat content. This is a relatively new kind of cheese, invented in the early 20th century by adding even MORE cream to a double cream cheese. Some of the most delicious examples of this heavenly invention are Delice de Bourgogne, Saint Andre and Italian Cambozola (this last one a wonderful blue cheese). You can definitely tell the difference the additional butterfat makes, these cheeses completely melt in your mouth.

Double and Triple Cream fromages are incredibly rich and creamy; they're buttery and easy to spread, with a wonderful natural sweetness thanks to the added cream. The flavor is smooth and mild, as they're not aged for long periods of time. Rich and dense, pair them with light accompaniments for contrast, so as to not overwhelm the palate. To drink, champagne and Prosecco are good choices. Fresh fruit is a must, like strawberries, raspberries (any type of berry will work), grapes, pears, and nuts like walnuts.

One a final note regarding butterfat: although the words "butter" and "fat" might throw health-conscious gourmets into a panic, keep in mind that butterfat in this case refers to the percentage of fat only in the dry matter of the cheese. A cheese has dry and moist content, and in the case of triple and double creams, that moisture content is quite high, almost 50%. So, the butterfat content is 70% of HALF the cheese, and the TOTAL fat of the cheese is a lot less than 60 or 70%, sometimes just 30-35%.

The time required to smoke would depend on the quantity of the meat. For instance a 10-pound brisket that is smoked at a temperature of 225 F will take about 15 to 20 hours. Raw Materials

First things first, let us start with the raw materials you would need. They are - a prime cut of meat and good pieces of wood for the smoke. Place the meat in the grill with the fat side up, so that the meat below it is kept moist by the lard.

Wrapping

Smoking the brisket for 5 to 6 hours at a stretch can dry even the fattiest meat. To prevent this from happening, you would want to wrap the brisket in foil after the first 5 hours of smoking. Wrapping the meat would also create a subtle smoked flavor that would add to its taste and ensure that the meat is succulent and tender.

Carving

Once your brisket is done, it is time to enjoy the fruits of your labor. Remove the brisket from the grill and carve it into medium slices. Let it cool for about 10 to 15 minutes and serve with a smothering of hot sauce.
